Buckwheat bread is a delicious and healthy homemade baked product that is distinguished by its medium-porous crumb, thin crust, pleasant aroma and wonderful taste. As you know, buckwheat flour does not contain gluten (gluten), therefore, pancakes and pancakes, as well as delicious pies, are most often prepared on the basis of this product. This recipe for homemade bread in the oven, in addition to two types of flour (wheat and buckwheat), includes products traditional for this baking: water, sugar, salt, a little oil and yeast. Regarding the last ingredient: I use dry active yeast (they are added immediately to the flour), but you can take dry (the same amount) or pressed (10 grams) - they must first be diluted in warm water with sugar and left for 20 minutes. Only then combine with flour.

  1. The recipe for making bread includes the following products: wheat and buckwheat flour, warm boiled water, salt, granulated sugar, yeast, sunflower oil (you can use butter - it will be even more aromatic).
  2. We sift two types of flour into a bowl - wheat (I have the highest grade) and buckwheat (it is very fragrant).
  3. Then add sugar, salt and active dry yeast. We mix everything.
  4. Pour warm (38-39 degrees) water.
  5. Knead the dough until the dry ingredients are moistened. Only then can the oil be added.
  6. We knead the dough for about 10-15 minutes, until the bun becomes very smooth and tender. Cover the bowl with a towel and let the dough rest in a warm place for an hour.
  7. During this time, the dough will grow well.
  8. We crumple it and let it distance for another hour. I did this in a special proofing basket, but you can mold a bun or a loaf, or use a baking dish.
  9. The piece has come up again and is ready to bake. While the dough was growing, we turned on the oven and warmed it up to 210 degrees along with a large bowl filled with boiling water. We will bake buckwheat bread in a steam bath.
  10. If you have a proofing basket, just gently turn it over onto a baking sheet with parchment.
  11. We bake bread at 230 degrees in a steam bath for about 40-45 minutes.
  12. Cool homemade bread with buckwheat flour on a wire rack and can be served.
