I have baked Brazilian carrot cake (bolo de cenoura) countless times and only recently realized that there is still no recipe on the site. I highly recommend preparing and trying these soft, airy and delicious homemade baked goods. There is no taste of carrots in such a cupcake, but juiciness and tenderness are guaranteed!

Fresh carrots are used for the preparation of this cake: the color of the finished baked goods depends on the color saturation of the root crops. Vegetable oil should be taken refined, that is, odorless (in my case, sunflower oil). Chicken eggs will need large ones (take 5 medium ones, and 6-7 small ones). Baking powder I always add homemade

  1. To prepare a delicious carrot cake, we need the following ingredients: wheat flour (I have a premium Lida), granulated sugar, refined vegetable oil, chicken eggs, fresh carrots, vanilla sugar (you can replace it with vanilla or vanilla essence), baking powder and a little salt. All foods should be at room temperature.
  2. Break chicken eggs into the blender bowl, add granulated sugar, vanilla sugar and a pinch of salt
  3. We punch everything until smooth for about 30 seconds (do not forget to close the lid tightly). Then put the raw carrots, peeled and cut into small pieces. Pour in odorless vegetable oil.
  4. Punch everything together again until the ingredients are completely homogeneous.
  5. It remains to add wheat flour to the liquid base, which must be mixed with a baking powder in advance and sieved through a sieve.
  6. If necessary, stop the blender and help it stir in the flour if it doesn't want to sink to the bottom and mix with the liquid base on its own. The result is a rather liquid, flowing dough, which in consistency resembles low-fat sour cream or thick kefir.
  7. Be sure to grease the baking dish with vegetable oil and pour the dough into it. Alternatively, you can use soft butter, but in this case, additionally sprinkle the surface with wheat flour (shake off the excess). This method of preparing a baking dish is called a French shirt.
  8. We bake the Brazilian carrot cake in a preheated oven at 180 degrees for about 50 minutes. After that, turn off the oven and let the baked goods stand with the door closed for another 10 minutes. It is very important to understand that the baking time can be very different from the one indicated in the recipe! It depends not only on the oven (I have a gas, bottom heating, no convection, and you can have an electric one), but also its nature, as well as the size of the baking dish.
  9. Remove the finished carrot cake from the mold and let it cool completely. Sprinkle with icing sugar or pour over with chocolate icing.
