Ingredients

Directions

  1. Divide the rabbit into parts, rinse, blot with water and place all parts in a bowl.
  2. Pestle the thyme and rosemary stalks, add crushed garlic, juice and zest of two lemons, honey and olive oil. Stir and pour over the hare mixture. Let the meat sit in the marinade for 30 minutes.
  3. Approximate cooking time on charcoal at a temperature of 200 ° C:
  4. • belly - 25-30 minutes;
  5. • kidneys and liver - 4 minutes;
  6. • saddle and ribs - 15-20 minutes;
  7. • legs and shoulder - 35-40 minutes.
  8. While the hare is soaking, set the coals to warm up to 200 ° C. Then remove the pieces of meat from the marinade, salt and pepper, put on skewers. Wrap large pieces with strips of bacon and secure with an additional skewer. Cut the liver into 4 pieces and cut the kidneys in half and place them on a separate skewer.
  9. Place your feet and forelegs with your shoulder to roast first. When these parts are cooked for 10 minutes, send the skewers with the belly to the wire rack. After another 10 minutes, it will be time to prepare the saddle and ribs. All meat must be turned over frequently and brushed with marinade each time.
  10. When all the pieces have a nice golden color, add the skewer with kidneys and liver, and place the remaining slices of bacon on the wire rack to grill. A few minutes are enough for the liver and kidneys. Transfer the cooked meat to rest, top with toasted bacon.
  11. Serve ruddy hare with white beans, fried potatoes, grilled vegetables and assorted salads. The side dish depends on your preference. White wine is recommended for the charcoal hare.
