  1. To prepare crumbly chocolate cookies, we need the following ingredients: wheat and corn flour, granulated sugar, chicken eggs, dark chocolate, unsweetened cocoa powder, butter, baking powder and a little salt.
  2. We immediately turn on the oven to warm up (200 degrees). In a bowl, combine 120 grams of wheat and 100 grams of corn flour, add 15 grams of high-quality cocoa powder, 1 teaspoon of baking powder and a pinch of fine salt.
  3. We mix everything thoroughly and preferably sift through a sieve so that the dry mixture becomes even more homogeneous and airy.
  4. Break 2 chicken eggs into a separate bowl, add 150 grams of granulated sugar.
  5. Beat the eggs and sugar lightly with a fork, whisk or mixer. You do not need to beat for a long time.
  6. In another bowl, you need to melt 200 grams of dark chocolate with 40 grams of butter.
  7. It is recommended to heat chocolate in a water bath, but it is much faster and more convenient to do this in a microwave oven in the Defrost mode. The most important thing is not to overheat the chocolate, otherwise it will curl up into lumps. Then there will be no turning back. Every 5-10 seconds of warming up, take out a bowl of chocolate and butter, mix everything with a spoon or fork. When the chocolate is hot enough, just stir it thoroughly - the pieces will melt on their own from the heat and hot butter. By the way, dark chocolate melts longer than milk chocolate.
  8. Pour beaten eggs with sugar into a bowl with a dry mixture and put melted chocolate there (it is not very hot).
  9. We mix everything to get such a lumpy dough. You can stir with a spoon, or by hand.
  10. It remains only to divide the dough into pieces of the same size (I have 16 pieces, 46 grams each), roll them into balls and put them on a baking sheet covered with baking paper.
  11. We bake the blanks in a preheated oven at 200 degrees for about 15 minutes. Baking times can vary considerably depending on the particular oven. I have a Hephaestus gas oven, no convection, bottom heating.
