A simple and quick recipe for delicious homemade pastries - we cook tender and fluffy chocolate muffins in the oven. They go perfectly with a mug of aromatic tea, a cup of coffee or a glass of milk for breakfast or as a dessert. The minimum set of available products, a little desire and the result will not be long in coming!

I should note that in the absence of portioned molds for muffins and muffins, these pastries can be prepared in one large form (round, oval, square, rectangular or embossed with a hole - it doesn't matter). Only in this case, be guided by the characteristics of your oven and bake a fragrant cake with chocolate at 180-190 degrees at an average level until a dry torch.

  1. To prepare fluffy and tender muffins, take premium wheat flour, sugar, sour cream of any fat content (I have 20%), medium-sized chicken eggs (45-50 grams each), butter (at least 72% fat), baking powder and vanillin for flavor (can be substituted with a teaspoon of vanilla sugar).   2. Sift wheat flour into a bowl, mix it with baking powder and sift through a fine sieve again.
  3. Break chicken eggs into another dish, add granulated sugar and vanillin (optional).
  4. Beat eggs with sugar using a mixer at high speed for 5-6 minutes, until everything turns into a fluffy and light foam. After that, add sour cream and melted (cooled) butter.
  5. Beat everything again, and then in a few steps we introduce wheat flour with baking powder.
  6. The result is a tender, smooth and homogeneous dough, which is similar in thickness to pancake dough (maybe a little thicker). At the end, it remains to add chocolate: I have it in the form of drops, but you can safely replace it with chopped one.
  7. Stir the chocolate into the dough - everything is ready for baking.
  8. We take molds for cupcakes or muffins (I have silicone ones), into which, if you wish, you can insert beautiful paper capsules. We lay out the dough in tins - in total, 14 pieces are obtained.
  9. We bake chocolate muffins in a preheated oven at 190 degrees on a medium level for 25-35 minutes. The baking time of muffins depends on the characteristics of your oven (I have gas, bottom heating).
  10. We take out the finished muffins from the molds, cool them down and enjoy.
