  1. To make these simple homemade cookies, we need the following ingredients: premium wheat flour, cottage cheese, butter, granulated sugar, a chicken egg, baking powder, salt and vanillin.

  3. Stir so that all dry ingredients are evenly distributed throughout the volume.
  4. In a dish suitable for kneading dough, put 200 grams of cottage cheese, 100 grams of soft (take it out of the refrigerator in advance) butter and 1 medium-sized chicken egg (I use category C-1, weighing 50 grams).
  5. We punch everything with an immersion blender to get a homogeneous smooth mass. Of course, you can combine the foods with a food processor mixer or just with a fork. However, in this case, I advise you to rub the cottage cheese through a sieve so that there are no lumps.
  6. Add dry flour mixture from step 3.
  7. Quickly knead the dough with your hands. It doesn't take long - when not a single lump of flour remains, the dough is ready. It turns out to be soft, tender and not sticky at all. Cover the bowl with a damp towel (tighten with cling film) and leave it on the table for 15-20 minutes.
  8. When the dough is settled and gluten develops in it, it will become very pliable and pleasant to work with. I divide the dough into 2 parts and roll each into a thin layer (no thicker than 2 millimeters). For rolling, use the remaining tablespoon of wheat flour.
  9. Using a ring, a special round cutting, a glass or a glass, cut out circles from the dough. We collect the scraps, knead, roll out and cut out again. In total, I get 42 blanks (with a diameter of 8 centimeters).
  10. Pour 80 grams of granulated sugar into a saucer (you may need a little more or less) and dip the dough blanks on both sides so that the sweet crystals pour in.
  11. Fold the cake in half, pressing it with your fingers.
  12. And fold it again, gently pressing all the layers of the curd dough.
  13. The result is such a blank for the future cottage cheese cookies.
  14. But after all, it is called Crow's Feet, so for the sake of similarity with a knife we ​​make two cuts on the round side. We do the same with the rest of the blanks.

  16. We bake cookies in an oven preheated to 200 degrees for about 20 minutes. I bake on bottom heat (no convection) for 15 minutes and then turn on the grill for 5 minutes to brown the cookies.
