  1. To prepare these simple and delicious homemade cookies, we need the following ingredients: premium wheat flour, apples, cottage cheese (I have 5% fat), refined sunflower oil, granulated sugar, cane sugar, ground cinnamon, baking powder, and a little salt for balance of taste.
  2. We immediately turn on the oven to warm up to 180 degrees. Sift wheat flour into a separate bowl, add baking powder and salt. Mix everything thoroughly or sift again.
  3. You can knead the dough for cottage cheese cookies with your hands, or even easier and faster - in a food processor. Put cottage cheese in a bowl, add granulated sugar and vegetable oil.
  4. We punch everything until the sugar crystals are homogeneous and dissolve. When not using the food processor, stir everything with a spoon or whisk.
  5. Add the dry mixture from step 2.
  6. We punch everything quickly (mix by hand or by hand kneading) so that the dough gathers into a lump. It is very soft, like plasticine, but at the same time it does not stick to your hands.
  7. Transfer the dough to a bowl and add apples (3 medium fruits, net weight -200-230 grams), which need to be cut into small cubes. Do not forget to wash, dry, cut the stalks and seed pods first. Cut the skin or not - it's up to you.
  8. Stir the apple pieces into the dough so that the fruits are evenly distributed.
  9. Divide the dough into pieces of the same size. I got 880 grams of dough, which I divided into 16 parts (55 grams each). We roll into the balls.
  10. Now we will make a fragrant dressing, for which we simply mix ground cinnamon with cane sugar. In the absence of such sugar (it gives a caramel taste), take regular granulated sugar.
  11. Roll each piece in a cinnamon-sugar mixture.
  12. Transfer to a baking sheet lined with baking paper or a Teflon mat.
  13. We bake in a preheated oven at 180 degrees for 25-30 minutes. I have a gas oven, bottom heating, no convection.
  14. Immediately after baking (warm), the cottage cheese biscuits with apples will be very, very soft, and after cooling down they will slightly thicken, but still retain their tenderness and juiciness. Cook for your health, friends, and bon appetit!
