About the ingredients. I use the highest grade wheat flour, but the first grade or even whole grain is great for muffins. True, in this case, its amount may (even most likely will) differ from that indicated in the recipe. The amount of sugar can be slightly reduced, but with the proportions I gave in the recipe, the baked goods are not sugary at all.

  1. To make this delicious homemade cake, we need the following ingredients: wheat flour, granulated sugar and vanilla sugar, sour cream, butter, chicken eggs, seedless raisins, baking powder and salt. All foods should be at room temperature.
  2. Pour 280 grams of premium wheat flour into a separate bowl, add 1 tablespoon of baking powder and a pinch of finely ground salt (to balance the tastes).
  3. Mix thoroughly and additionally sift through a fine sieve. Thus, we get rid of possible debris, lumps and saturate the dry mixture with oxygen.
  4. We wash 100 grams of raisins, put them on a sieve, and then dry them on a paper towel (napkins). Raisins can be any (dark, light), but always seedless.
  5. Put 180 grams of soft butter in a bowl for beating (I have a bowl from a food processor) (take it out of the refrigerator a couple of hours before making the cake). Add 200 grams of granulated sugar (you can use powdered sugar) and a teaspoon of vanilla sugar.
  6. Beat with a mixer at high speed for about 10 minutes. The sugar will not completely dissolve, but the mass will become lighter and more airy. We drive chicken eggs (3 pieces) into the bowl one by one and continue to beat. Once the egg is combined with the butter, add the following.
  7. Put 200 grams of sour cream and beat for just a few seconds so that the mass becomes homogeneous.
  8. Finally, add the dry flour mixture to the egg-oil base.
  9. Mix well - with a mixer or a spatula. The most important thing is to stop on time and not to beat the cake dough. Once there are no dry patches of flour left, the muffin dough is ready.
  10. Pour the prepared raisins into the bowl and mix them into the dough in 3-4 movements.
  11. As a result, the dough for this delicious homemade cake turns out to be very tender, creamy. It does not spread and keeps its shape.
  12. We take a baking dish (my rectangular dimensions: 24x11 cm - at the top, 21x8 cm - at the bottom, height - 6.5 cm). Lubricate it with odorless vegetable oil so that the finished cake does not stick, or cover it with parchment. We spread the dough in a mold and level it with a spoon or spatula.
  13. We bake a homemade cake in a preheated oven at an average level for about an hour at 180 degrees. Cooking time depends on the size of the mold and the characteristics of the oven. We check the readiness with a wooden skewer or a toothpick, which should come out of the dough dry.
  14. Let the finished cake cool, after which we take it out of the mold, remove the baking paper (if used).
  15. Cut into portions and enjoy aromatic, tender and so delicious homemade cakes. Cook for health, friends, and bon appetit!
