In the season of fresh berries and fruits, you want to cook everything with them, this also applies to baking. Today I suggest making a grated pie with apricots and cottage cheese. The sandy base literally crumbles in your mouth, and the delicate curd filling with apricots complements it perfectly.

Ingredients

Directions

  1. Prepare foods according to the list.
  2. Take high-quality cottage cheese and butter - they will be felt in the finished cake and determine its taste.
  3. Hold the butter in the freezer until it hardens.
  4. Grate the frozen oil on a coarse grater and combine with flour. Rub flour and butter into crumbs with your hands.
  5. Add a pinch of salt, baking powder and sugar. Mix everything.
  6. Separate the yolks from the egg whites and add to the crumb (and pour the whites into a beating container and leave aside for now).
  7. Knead a soft dough with your hands.
  8. Divide the finished dough into two parts: one larger (it will be the base of the pie), the second smaller (it will serve as the top layer of the pie). Wrap the dough with cling film and put in the freezer for 15 minutes.
  9. Turn on the oven to heat up to 180 degrees.
  10. Mix cottage cheese with apricot jam.
  11. Combine egg whites with vanilla sugar and beat with a mixer for two minutes, until fluffy white.
  12. Now the whipped egg whites and cottage cheese with jam must be combined and pounded with a blender until a homogeneous creamy mass without lumps is obtained (this will take 2 minutes).
  13. Add a spoonful of starch to the resulting curd mass.
  14. Mix well.
  15. Wash and halve the apricots. Remove the bones.
  16. Remove a large piece of dough from the freezer and grate on a medium grater directly into the mold, covering the bottom with an even layer.
  17. Put the curd mass on the dough. Smooth the surface.
  18. Now spread the halves of the apricots in slices down over the entire area of the curd layer and press lightly.
  19. Grate the remaining dough on a medium grater and spread over the entire surface of the cake.
  20. Bake the cake at 180 degrees for 45 minutes.
  21. Cool the grated pie with apricots and cottage cheese.
  22. After cooling, the cake can be cut into small pieces, I would even call them cakes - they are simply divine in taste and texture.
  23. Enjoy your meal!
