There are a lot of recipes for grated pies, but one thing unites them - ease of preparation. Today we bake a delicious grated curd pie with raisins. Loose dough and delicate filling with islands of sweet dried grapes - try it!

For the grated dough, I use premium wheat flour and medium sized chicken eggs (45-50 grams each).

  1. To make grated curd cake, we need the following ingredients: cottage cheese, wheat flour, granulated sugar, butter, chicken eggs, raisins, vanilla sugar, baking powder and salt.
  2. In a separate bowl, mix 350 grams of wheat flour with 1 teaspoon of baking powder and a pinch of fine salt.
  3. The grated pie dough can be easily made by hand, but it is much faster and more convenient to do it in a food processor. In a bowl, combine a couple of chicken eggs, 100 grams of soft butter (remove from the refrigerator in a few hours and leave on the table) and 150 grams of granulated sugar.
  4. We punch everything with a metal or plastic knife nozzle until a homogeneous smooth mass is obtained.
  5. Add all the flour mixture to the bowl at once.
  6. Quickly combine the fatty base with the flour base to get a homogeneous dough. It should be soft, sticky and not clogged with flour.
  7. Divide the dough into two so that they are about the same weight. If you wish, you can use a kitchen scale, but in this case it is completely irrelevant. We flatten each piece of dough into a cake and send it to the freezer for 30-50 minutes (I have -20 degrees there), so that it is properly frozen and solid. It is important not to rush, as soft dough is very difficult to grind.
  8. For the filling, put in a bowl 500 grams of cottage cheese, 2 chicken eggs, 100 grams of granulated sugar and 1 teaspoon of vanilla sugar (can be replaced with a pinch of vanillin).
  9. We punch all the products with an immersion blender to get a completely homogeneous and smooth mass. In terms of consistency, the raw curd filling should be like low-fat sour cream. If you don't have a hand blender, use a stationary blender. There is no such thing? Rub the cottage cheese through a sieve, beat the eggs with sugar and mix everything thoroughly.
  10. Add 50 grams of raisins to the curd mass. Do not forget to wash and dry it.
  11. Stir and leave on the table for now.
  12. We proceed to the assembly of the grated pie. We take a baking dish of a suitable size (I have a silicone 20x20 cm) and evenly rub one piece of frozen dough into it on a coarse grater. There is no need to lubricate the mold, as there is a lot of butter in the grated dough. If you are not sure of your shape, you can lightly grease with refined vegetable oil or butter (in the second case, be sure to powder it with wheat flour).
  13. We shift the curd filling, distributing it with a spoon or spatula.
  14. Rub the second part of the dough on top of the curd salt. It should lie evenly, so when working with a float, move it over the mold.
  15. We put the pan with grated pie in the preheated oven to the middle level and cook at 180 degrees for about 1 hour until a beautiful ruddy color. I have a gas oven, bottom heating, no convection. You always focus on the characteristics of your assistant.
  16. Cool the grated pie with cottage cheese and raisins in the form, after which it can be taken out and cut into portions.
