Today we will prepare a jellied apple pie according to a very simple and quick recipe. Delicate, soft, juicy, moderately sweet dough and many apple islands with a subtle sourness will pleasantly surprise you, and cinnamon with vanilla will make it incredibly fragrant. I won't tell you any secrets when making a jellied apple pie - everything is as easy as shelling pears. You will, of course, find some nuances along the way of the recipe (I can't help but focus on something, you know), but they are not so fundamental either. We will cook this delicious pie on the basis of a bulk dough on kefir, the composition of which can be changed every time, adjusting to your own taste preferences.

  1. The recipe for a jellied pie with apples includes the following ingredients: 3 apples (we take a larger than average size - about 500 grams by weight - sweet and sour varieties), kefir of any fat content, wheat flour of the highest or first grade, medium-sized chicken eggs (45-50 grams each), butter, granulated sugar, as well as a pinch of fine salt and vanillin (optional, you can skip it if you don't like it). In addition, I advise you to use ground cinnamon, with which we will then season the apple slices - it will be very fragrant. But if you don't like the smell of cinnamon, skip this ingredient. Let me remind you that when working with bulk dough, all products must be at room temperature, so remove them from the refrigerator in advance and leave them on the table for about an hour.
  2. Immediately turn on the oven to warm up to 180 degrees, since the dough is made very quickly. Weigh the wheat flour, mix it with half a teaspoon of baking soda and a pinch of salt. We sift everything to get rid of lumps and impurities.
  3. Pour 250 milliliters of kefir into a large bowl, add two chicken eggs, 140 grams of sugar and, if desired, a pinch of vanillin (you can replace with 1 teaspoon of vanilla sugar).
  4. Add 50 grams of butter there, which we will pre-melt and cool to room temperature.
  5. Mix everything until smooth with a whisk or beat for a short time with a mixer. It is important that the granulated sugar crystals are almost completely dissolved. Then add the dry mixture and stir again.
  6. The poured dough must be completely homogeneous, without lumps. In consistency, it resembles low-fat sour cream.
  7. Now we take a baking dish (I have a square 20x20 cm). If your mold is not silicone, lubricate it with vegetable oil. Silicone lubrication is not necessary - nothing sticks to it (at least for me). We spread half of the bulk dough into the mold and level it with a spoon or spatula. You see, the dough is not quite runny - it partially holds its shape.
  8. Next, quickly peel the apples (remove the skin and remove the seed pods), cut the pulp into medium slices. Spread the apple slices evenly over the surface of the dough.
  9. If you like cinnamon, sprinkle apples with aromatic spice.
  10. It remains only to cover the fruit with the second half of the bulk dough and level it. Cooking a jellied apple pie in a preheated oven on an average level at 180 degrees for about 40 (+ -) minutes.
  11. When the cake is well browned, check the readiness with a wooden skewer or a toothpick. If the torch comes out of the dough dry, the jellied pie is ready.
  12. We take it out of the mold and let it cool. Such a cake, by the way, is good both warm and completely cooled down.
