A wonderful recipe for lemon raisin pie, the dough for which is kneaded in vegetable oil and water. Such a pie without eggs, milk and butter is prepared quickly, simply and turns out to be surprisingly fragrant, loose, moist, moderately sweet and with a bright lemon flavor. Great idea for a lean or vegetarian menu. A piece of such a lean pie is just what you need for your morning cup of tea or coffee!

  1. We prepare products according to the list.
  2. Rinse the raisins and pour boiling water for about 5-10 minutes.
  3. We turn on the oven and set the temperature to 180 degrees.
  4. We wash the lemon thoroughly. Remove the lemon zest with a fine grater, and squeeze the juice from the lemon pulp. I got about 1 tbsp. spoon of zest and 50 ml of juice.
  5. Combine vegetable oil, juice and lemon zest in a deep bowl.
  6. Sift the flour into a separate bowl. Add soda, sugar and turmeric. We mix.
  7. Pour in the lemon-oil mixture. We mix.
  8. Drain the water from the raisins, dry them with a paper napkin and send them into the dough. Mix thoroughly.
  9. Let the dough stand for 5 minutes for the soda to react with lemon juice. Then mix the dough again.
  10. Grease a baking dish (I have a heart-shaped shape of 19 cm) with vegetable oil. I have a silicone mold, so I didn't lubricate it with anything.
  11. We bake the lean lemon raisin pie in the oven, preheated to 180 degrees, for about 20-25 minutes. We check the readiness with a wooden stick.
  12. Lean Lemon Raisin Pie is ready. Cool it slightly in the form, cut into pieces and serve.
