Meat fillet baked under a vegetable coat

  1. Wash and dry the meat with a paper towel. Season with salt and pepper. Preheat a skillet with 2 tbsp. l. oil and fry the meat well on 2 sides.
  2. Cut onion into squares, garlic into slices. Cut the tomatoes into small pieces. Chop the greens.
  3. Heat some oil in a frying pan, fry the onion and garlic until transparent. Add lemon zest and 1 tsp. dry marjoram. Simmer for 1 minute. Add oil and tomatoes and simmer, stirring occasionally for 5 minutes. Remove the frying pan from heat, add herbs and chop the pulp of white bread, salt and pepper to taste, add a pinch of sugar. To mix everything.
  4. Preheat oven to 175 degrees. Place the meat in a baking dish. put tomato filling on each piece of meat, while pressing it down a little with a spoon.
  5. Bake for 40-50 minutes. It all depends on the meat you are using. I bake the turkey fillet for about 30 minutes.
  6. Decorate the finished meat with herbs.
  7. The meat is juicy with a lemon flavor.
