  1. Boil the pork knuckle in water for 3-4 hours, depending on the weight.
  2. Cool the shank slightly and remove the bone.
  3. Separate the skin gently and remove the fat from it
  4. Finely chop the meat
  5. Mix fat with meat, add chopped
  6. parsley, garlic, pepper.
  7. Mix everything well and salt
  8. Take any shape (I have a rectangular silicone
  9. cake pan)
  10. We put a film on the bottom of the form so that its edges hang down
  11. We spread the skin in the form on the bottom and on the sides
  12. Then put the meat on the skin and press it well
  13. Cool the saltison in the refrigerator under a small
  14. press for at least 6 hours (I cooled all night)
