Pork baked with tomatoes and cheese is an excellent choice for weekdays and holidays. This dish cooks pretty quickly, but it looks beautiful and tastes great. Serve with mashed potatoes or a simple green salad.

  1. Preheat oven to 180 ° C. Brush a large baking dish with olive oil. Cut the pork across the grain into 1 cm slices.
  2. Place pieces of pork on a work surface, cover with cling film or parchment and beat to a thickness of 7–8 mm. Season with salt and pepper on all sides. Transfer the meat to a mold, it should fit in one layer.
  3. Crush the cloves of garlic with a knife blade and peel them off. Chop the garlic finely. Separate the parsley leaves from the stems (you won't need them) and chop finely.
  4. Grate the cheese on a coarse grater. Set aside a third of the cheese, you will need it later.
  5. Combine most of the cheese with sour cream, garlic and parsley, add a little salt and pepper.
  6. Spoon the cheese mixture over the meat and smooth the surface.
  7. Cut the tomatoes into thin circles and overlap the meat. Season with a little salt and pepper. Sprinkle the tomatoes with the remaining grated cheese.
  8. Place the dish in the oven and bake for 45 minutes, until tender. The cheese should melt and gild. Serve the dish in the same form in which it was baked.
