Pumpkin Soup

Hearty and tasty vegetable soup with brown croutons.

Ingredients

  1. Wash and peel the potatoes and pumpkin, remove the seeds from the pumpkin. Cut into small cubes. Peel the onion and chop finely. Heat the oil in a saucepan with a thick bottom and fry the onion until transparent for about 3-4 minutes.
  2. Add vegetables to the onion. Pour boiling water over so that it only covers them. Season with salt to taste and cook over low heat until soft for about 15-20 minutes.
  3. Drain the broth, and beat the vegetables with a blender until smooth.
  4. Dilute with hot milk to the desired consistency. Warm up over medium heat for 5-10 minutes. Season to taste, add ginger, stir.
  5. Pour into bowls. Serve with croutons.
