Juicy cabbage filling with smoked sausage wrapped in soft yeast-free dough - both tasty and very satisfying. The dough is prepared with kefir and baking powder and, unlike yeast dough, does not require proofing. Such pastries are good as a substitute for bread for first courses or as an appetizer.

  1. Prepare all ingredients.
  2. It is best to use young cabbage, as it cooks faster and turns out to be tender and juicy.
  3. You can choose spices according to your taste.
  4. Prepare the cabbage filling: Peel the onion, wash and cut into cubes.
  5. Heat vegetable oil in a deep skillet.
  6. Place the chopped onion there. While stirring, fry the onion for 2-3 minutes over medium heat.
  7. Peel the carrots, wash and grate on a coarse grater.
  8. Place the carrots in the skillet with the onions. Stir. Cook for another 3-4 minutes over low heat.
  9. Wash the cabbage and chop into thin strips, and cut the strips into cubes.
  10. Send the cabbage to the skillet with carrots and onions. Mix vegetables in a frying pan and simmer over low heat for 10-15 minutes, until soft.
  11. Add salt, ground pepper, paprika, dried garlic and soy sauce. Stir. Simmer until all ingredients are cooked, about 5-8 minutes.
  12. Cut the smoked sausage into cubes and add to the cabbage. Stir.
  13. Simmer the filling for 4-5 minutes. Cool the finished filling.
  14. Now prepare the dough: sift the flour into a deep bowl. Add baking powder. Stir.
  15. Heat the kefir a little (no higher than 60 degrees).
  16. Add the egg. Shake with a whisk until smooth.
  17. Add sugar and salt. Stir.
  18. Add flour and baking powder.
  19. Stir with a spoon until the entire dry mass is moist. Pour in vegetable oil. Stir it into the dough.
  20. Knead into a soft dough that does not stick to your hands.
  21. On a floured surface, roll out the dough into a rectangular thin layer (I roll the dough on parchment paper - it will be more convenient to transfer it to a baking sheet).
  22. Brush the dough with soft butter.
  23. Spread the cabbage filling along the middle of the dough.
  24. Start rolling: wrap one side of the dough over the filling. Make parallel transverse cuts with a knife over the entire area of ​​the second side.
  25. Form a roll and pinch the edges on all sides.
  26. Transfer the roll to a baking sheet, brush with whipped yolk and send to bake in a hot oven for 30-50 minutes - depending on the power of your oven and the size of the roll.
