Not so long ago, I became a mother again. I have another child. No, not even two! Wheat and rye starter cultures. I am not exaggerating and in no way am I laughing - these are two completely living organisms that require daily care (even 2 times a day).

In fact, it is a pleasure to take care of the starter cultures. They just need to be protected from drafts, kept warm, fed twice a day - in general, create favorable living conditions, love, groom and cherish. Just like with the kids.

  1. A simple recipe for these delicious and satisfying pancakes includes wheat sourdough, wheat flour, water, chicken eggs, refined vegetable oil, sugar, salt, and baking soda. You can also pour a pinch of vanillin into the dough - it will be even more aromatic.
  2. I keep the starter culture used in this recipe in the refrigerator. Every day, renewing the main wheat sourdough, I put the leftovers in a jar before feeding and close the lid. It's a pity to throw it away, and you can cook a lot of delicious dishes on its basis. Well, for example, the same awesome tortillas with potatoes and fried onions. This is how a half-liter jar of leftovers is collected, and I bake something for the family. I was distracted: we are preparing pancakes with sourdough. Pour the wheat sourdough straight from the refrigerator into a suitable dish. Add water, chicken eggs, salt, sugar, baking soda. Mix everything well.
  3. Then gradually add the sifted wheat flour, mixing it into the dough. I indicated the amount of flour that is needed exactly for my dough. If your dough is not thick enough, feel free to add more flour.
  4. So, we mixed the dough well so that there were no lumps.
  5. Now it remains to pour about 3-4 tablespoons of vegetable oil and mix them into the dough. We need the rest of the oil for frying.
  6. In terms of thickness, the dough for pancakes according to this recipe turns out to be quite thick. It is about the same as yeast for pancakes - it does not drain from a spoon, but stretches, flops in a piece. If the dough is thinner, the pancakes will turn out flat.
  7. Now pour a little odorless vegetable oil into the pan, heat it and spread the dough with a tablespoon. Cooking pancakes on a low-medium heat under a lid until the top grasps, that is, the dough is not runny.
  8. Turn over the ruddy pancakes and bring the second side to the same state.
  9. We prepare the rest of the dough in the same way, miraculously turning it into delicious plump pancakes. I got 40 ruddy donuts. We ate part of it as a family, and I froze the rest in a bag. After heating, such sourdough pancakes are no different from fresh ones.
