A properly prepared fish burger will give odds to the juiciest and tastiest meat burger! Moreover, the basis of this closed sandwich in our case is the queen of salmon - salmon.   1. Prepare your burger mince. Cut the salmon fillet very finely (the pieces should be the size of a pea). Slice the bacon in the same way. Grate the orange zest on a fine grater. Chop the parsley.
  2. Combine all ingredients of minced fish with honey and breadcrumbs. Stir. Season with salt and pepper to taste. Divide the minced meat into 4 equal portions. Moisten your hands with cold water and mold into oblong patties. Shape them to match the width of the baguette.
  3. Heat the grill pan and brush with vegetable oil. Cook the fish cakes for 3 minutes on each side. Bring to readiness, covered, if necessary.
  4. Cut the burger baguette slightly diagonally into 4 pieces. Cut each of them in half lengthwise. Grease the inner surface with butter and fry in a grill pan.
  5. Line the lower parts of the baguette with lettuce leaves and brush with mayonnaise. Top with fish cakes and goat cheese. Cover with top baguette halves. Serve immediately.
