  1. To prepare thick pancakes, we need the following ingredients: kefir or sour milk of any fat content, premium or first grade wheat flour, medium-sized chicken eggs, refined vegetable oil, granulated sugar, baking soda and salt. All foods should be at room temperature.
  2. Break a couple of chicken eggs into a dish of a suitable size, add 2 tablespoons of sugar and a pinch of salt.
  3. Beat everything with a mixer or a whisk until the sugar crystals dissolve.
  4. Add 500 milliliters of kefir and 3 tablespoons (we will leave a little for greasing the pan) odorless vegetable oil (I use sunflower oil).
  5. Stir everything, add 1 teaspoon of baking soda and mix thoroughly again.
  6. It remains to add 400 grams of wheat flour to the liquid base for future thick pancakes (I use the highest grade).
  7. We mix all the ingredients with a mixer or a whisk so that there are no lumps left. The pancake dough turns out to be quite thick - like low-fat sour cream. If you make such a dough too thin, the pancakes will grow in volume during baking, and will fall off after being removed from the pan.
  8. We heat the pan, grease it with a small amount of vegetable oil and a ladle (3-4 tablespoons), pour the pancake dough into the center. You don't need to smear anything or turn the pan - the dough will spread itself over the surface as it needs to.
  9. Immediately close the dish with a lid and cook the pancake over a low-medium heat until bubbles appear and the state is when the dough is baked on top.
  10. Turn the thick pancake over and bring the second side to readiness.
  11. Remove the thick pancake from the pan and cook the next one. In total, from the specified amount of ingredients used, I get 7 pancakes with a diameter of 17 centimeters.
