  2. It is advisable to choose good quality cocoa, which will give not only color, but also a light chocolate flavor.
  3. Brown sugar is needed for a light caramel aroma, but without it, it will also work out well.
  4. We heat the water to a temperature of about 38 degrees.
  5. Add yeast to warm water. Mix with a whisk and leave for 5-10 minutes.
  6. Combine sugar, cocoa and cinnamon separately. Mix well.
  7. Sift wheat and rye flour into a large bowl.
  8. Add salt.
  9. Then add a mixture of cocoa, cinnamon and sugar.
  10. Mix everything well until smooth.
  11. Melt the butter and combine with honey and apple cider vinegar.
  12. Mix well until smooth.
  13. Pour yeast and a mixture of honey, oil and vinegar into a bowl with dry ingredients.
  14. Knead a very soft damp dough. Such a dough will stick to your hands, so when kneading, you can grease your hands with odorless vegetable oil.
  15. Grease the bowl with vegetable oil, put the dough there, cover with cling film and leave in a warm place for about an hour.
  16. The dough should approximately double in size.
  17. Grease the bread pan with vegetable oil. If the mold is silicone, you do not need to lubricate it.
  18. We fill the form with the dough a little more than half, and cover with a towel.
  19. Leave the bread in a warm place for about 20 minutes.
  20. We turn on the oven to heat up to 200 degrees.
  21. During this time, the dough will once again rise in the mold. Sprinkle it with sesame seeds.
  22. Place the form with bread in an oven preheated to 200 degrees for 30-40 minutes. The readiness of the bread can be checked with a wooden skewer - when pierced, it should come out of the crumb dry.
  23. Remove the finished bread from the oven, cover with a clean towel and leave for at least an hour.
