  1. To make a delicious homemade pie, we need the following ingredients: jam, premium wheat flour, whey, chicken eggs, sugar, refined vegetable oil, yeast, salt. All foods should be at room temperature.
  2. Let's get down to making yeast dough right away. We sift 650 grams of wheat flour into a bowl (preferably twice), thanks to which it is not only loosened and saturated with oxygen, but also possible debris is removed. This is the amount of flour that I use (I always use the same brand), and you may need a little more or a little less.
  3. Add to the flour 1.5 teaspoons (1 heaping spoon) of fast-acting yeast, 3 tablespoons (about 60 grams) of sugar and 1 incomplete teaspoon of salt (ideally finely ground).
  4. Mix thoroughly with a fork or whisk so that all dry ingredients are evenly distributed throughout the mixture. We make a depression in the flour mixture and pour 300 milliliters of whey into it.
  5. The next step is to break 3 chicken eggs into a bowl, while putting one yolk in a separate bowl. We will need it later to lubricate the workpiece.
  6. We mix all the products - you can use your hand or a fork (as it is convenient for anyone). When the flour is moistened, absorbed moisture, add 2 tablespoons of odorless vegetable oil. I use refined sunflower.
  7. You need to knead this yeast dough for quite a long time (at least 10, and preferably 15 minutes) and intensively. As a result, it will become smooth, uniform, soft and not sticky. We round the dough into a ball and put it in a bowl, which we literally grease with a teaspoon of vegetable oil so that it does not stick to the dishes during fermentation. We send the yeast dough to heat for 1 hour. Where is the best place for dough to roam and what does a warm place mean? There are several options. First of all, in the oven with the light on (it turns out about 28-30 degrees - the ideal temperature for fermenting yeast dough). Then we tighten the bowl with the dough with cling film or cover it with a towel made of natural fabric (linen is best suited) so that the surface does not wind up and does not become covered with a crust. You can also let the dough ferment in the microwave, in which we first bring a glass of water to a boil. The dough will rise with the door closed, and the glass will stand in the same place. Then the bowl does not need to be closed with anything, since the water will evaporate, thereby maintaining the necessary humidity. Just make sure that no one accidentally turns on the microwave, otherwise the dough will disappear and there will be no cake.
  8. After 1 hour (time is a relative concept, it may take more or less) the yeast dough will rise very well, increase in volume by about 2 times. It is very soft and fluffy. If the dough rises poorly, then you have come across old yeast - increase the fermentation time.
  9. We do a light kneading to release excess air, re-round the dough and return to heat for another 40-50 minutes.
  10. During this time, the yeast dough will once again rise very well, become even more tender and fluffy. Now you can work with him.
  11. We knead the dough, then divide it into 2 unequal parts. One piece will be the bottom of the future jam pie, and the second will be needed for the top. Round the dough, cover it with a towel or cling film and let it rest for 5-7 minutes. If you do not allow the dough to lie down for a while, it will not roll out well and shrink back.
  12. Roll out a larger piece of dough into a layer (dusting with flour if necessary) to the size of a baking dish. I have a rectangular shape (32x22 centimeters), but round or any other is perfect. You can even bake a yeast pie with jam right on a baking sheet.
  13. I advise you to cover the baking dish with parchment paper or grease with vegetable oil. To make the parchment fit perfectly, I quickly moisten it in cold water and wring it out.
  14. We transfer the dough into the mold in such a way that the sides are obtained.
  15. Distribute the filling evenly (800 grams). I have this apple pumpkin jam with citrus fruits, but you can grab your favorite. It is important that it is thick enough.
  16. It remains to decorate the future cake. There are possible design options, but I suggest you make a completely simple way. Roll the second piece of dough into a layer, only thin.
  17. Using a pizza knife (whichever is most convenient) cut the dough into long thin strips.
  18. We randomly fold the strips into such squiggles and put them on top of the jam.
  19. We give the workpiece a distance of 20 minutes, and at this time we heat the oven (180 degrees). Before baking, grease the workpiece with a mixture of water (1 tablespoon - I did not indicate it in the ingredients) and egg yolk (1 piece) for a golden brown crust.
  20. We bake a yeast pie with jam for 40-45 minutes at 180 degrees on a medium level until golden brown. I have a gas oven, bottom heating, without convection (it cannot be there by definition). You focus on the nature of your assistant. Ready-made yeast pie with jam weighs about 2 kilograms
