Cabbage forshmak

  1. Cut the cabbage into large pieces and cook until soft. It took me 20 minutes from boiling.
  2. Boil the egg and chill. Peel the apple from the skin and seeds. Peel the onion. Cut off the crusts from pieces of white bread (or loaf) and sprinkle lightly with water. Coarsely chop everything.
  3. When the cabbage is boiled, drain and chill in cold water. Then squeeze the cabbage well from moisture and juice. I do it with my hands, wringing out in small batches.
  4. Scroll in a meat grinder or grind with a blender squeezed cabbage, onion, apple, slices of white bread and a boiled egg. Season well with salt and pepper, add lemon crystals (a pinch). Let stand for 5-7 minutes. Taste, add more salt and acid if necessary. Season the forshmak with vegetable oil and chill in the refrigerator for 30 minutes. Serve the snack with crackers and toast.
