Herring Porridge with Onions

  1. Peel the onion and chop finely.
  2. Cut off the head of the herring, remove the entrails and rinse the fish well under running water. Pat dry with paper towels.
  3. Use a sharp knife to remove the skin from the herring and separate the fillets from the bones.
  4. Chop the prepared fillet together with the onion into minced meat with a heavy knife, or pass through a meat grinder, or chop with a blender.
  5. Season the resulting mass with sour cream and mix thoroughly. Place in a salad bowl and garnish with finely chopped green onions.
