  1. Chop 50 g sugar and 2/3 thyme leaves with a knife. Melt the chocolate. Sift the flour, add the remaining thyme, zest, butter cubes and grind into crumbs. Add the remaining 50 grams of sugar and melted chocolate. Knead the dough. Form 2 sausages from the dough, wrap in cling film and put in the freezer for about 1 hour (look at the sausages, we need the dough to freeze and be cut, if it grabs strongly, it will crumble even under the sharpest knife) ...
  2. Dip sausages in thyme sugar, cut into slices and place on a baking sheet lined with baking paper. Bake in an oven preheated to 180 degrees for 20-25 minutes until golden brown. I did so, divided my cookies into 3 pretty baking sheets, the 1st baked for 20 minutes, the 2nd for 15 minutes, and the 3rd for 10 minutes. I liked the cookies that I baked for 10 minutes more, they are softer. And you choose the "crispness" of your cookies yourself.
