  1. Prunes and raisins, if hard, should be soaked in hot water for 10 minutes and then dried. If the raisins are small, like mine, then you don't need to grind it. But the prunes need to be cut into small pieces. Dry the nuts in the microwave or in a dry frying pan, and grind them in a blender. Not in flour !!!
  2. Let's make the dough. Sift the cornmeal, pour the olive oil into it and stir with a spoon. Add prunes, raisins, nut crumbs, sugar, salt and add freshly ground black pepper. Stir and pour in hot (almost boiling water) water. Stir well. The dough will be loose, crumbly, but it should gather in a lump.
  3. Form the dough into walnut-sized balls, flatten them slightly. Put on a baking sheet, on baking paper and bake in an oven preheated to 180 ° C for 12-15 minutes. Do not overdry! Unless, of course, you want to get croutons. You can turn off the oven and leave the cookies to “reach” in the cooling oven. The Bekutte biscuits are not very sweet, so they can be sprinkled with powder when serving.
