Crispy oatmeal cookies with salted caramel

What is the beauty of crispy oatmeal cookies with a thick layer of viscous salted caramel? I think everything is clear, right?

  1. In a bowl, mix flour, sugar, salt and soda.
  2. Fry the oatmeal in a pan without oil until a characteristic aroma appears.
  3. Rub the yolks through a sieve and mix with butter at room temperature until smooth.
  4. Mix the butter and flour mixture, form a ball from the dough and remove to cool for 15 minutes.
  5. Preheat the oven to 200 degrees. We take out the dough, roll it into a layer 1 cm thick and cut out round cookies with a glass.
  6. Transfer the cookies to a baking sheet with baking paper and bake for 15 minutes.
  7. We take out, cool on a wire rack. Put a teaspoon of caramel on one half of the cookie, cover with the second and enjoy over a mug of tea.
