There are several versions of the birth of fortune cookies. The most popular is "Sino-American". They say that at the beginning of the 20th century, the inhabitants of Chinatown San Francisco did everything possible to attract tourists with oriental exoticism, primarily, of course, culinary. It was then that the restaurateurs were asked to introduce an unusual dish for sweets into the menu of establishments - cookies, inside which a piece of paper with some wise oriental saying is hidden. I liked the idea, so much so that several large companies are professionally engaged in the production of these pastries these days. Of course, fortune cookies can be bought, but it is much more interesting to make it with your own hands - for one or another family holiday. Moreover, in this case, you can also choose the most correct words and write them on the cherished strips of paper.

Ingredients

Directions

  1. Make fortune cookie dough. Cut the butter (45 g) into cubes, put in a small ladle and, stirring occasionally, dissolve over medium heat. Remove from heat and let cool.
  2. Beat the egg whites
  3. Place the egg whites in a mixer bowl and beat on high speed until a fluffy thick mass is obtained, which will firmly adhere to the beaters when lifted up.
  4. Continuing to beat, add powdered sugar
  5. Gradually, without stopping whipping with a mixer, add powdered sugar into the protein mass. Beat until fluffy and smooth (the cookie dough should be light and smooth)
  6. Combine butter and proteins, add flour, knead cookie dough
  7. Add melted butter and flour to the whipped egg whites and stir. If the cookie dough is too thick, add 2-3 tbsp. l. water. Leave it on for 15 minutes.
  8. Grease the parchment with oil
  9. Heat the oven to 180 ° C. Line the baking sheet on which you plan to cook the cookies with high-quality parchment paper and brush with the remaining butter.
  10. Put the cookie dough on a baking sheet, bake
  11. Put the dough on a prepared baking sheet with a tablespoon in portions at a distance from each other. Flatten each to form a small pancake (about 8 cm in diameter). Bake the cookies until the edges are brown.
  12. Quickly fold hot cookies by placing a fortune note in the middle
  13. Remove the hot biscuits from the baking sheet and quickly roll them up, placing a fortune note in the middle of each. Fold each cookie in half and press lightly at the edges, shaping a shell. Then grab the center, place it on the edge of the mug or glass, and fold the edges, pressing against the outside and inside.
