Fried eggs - the favorite food of bachelors and students seems so simple! But the simpler the dish, the more flawless it should be. The ideal fried egg has a crunchy edge, fried (but soft) white, and a flowing pinkish yolk.

  1. Place a skillet (preferably a small one with a thick bottom) over high heat. Add oils. When the butter is hot (but not yet boiling), gently crack the eggs.
  2. After 30 seconds, reduce heat to medium and fry for about a minute more, occasionally tilting the pan in different directions and pouring hot fat over the eggs. Transfer to a warm plate and serve immediately.
