  1. Using a blender or coffee grinder, grind 300 grams of oatmeal into flour.
  2. Peel and seed one medium-sized sweet apple. Cut into small pieces.
  3. In a blender, puree a chopped apple, 1 ripe banana, and 1 tablespoon of lemon juice (or apple cider vinegar).
  4. Melt 3-4 tablespoons of coconut oil in the microwave. Transfer the resulting puree to a deep bowl. Add melted coconut oil, 1/3 teaspoon baking soda, 1 teaspoon baking powder, and a pinch of salt to it. Also use any baking spices such as cinnamon and ginger. Mix thoroughly.
  5. Add chopped oatmeal to the dough and knead - the dough will be sticky and moist.
  6. In the process of kneading, add flour in small portions (80 to 150 grams). Focus on the texture of the dough. Choose any flour - red or black rice flour is best; you can mix corn flour with white rice flour; or use regular whole wheat flour.
  7. Add 50 grams of raisins and 50 grams of nuts to the dough. Use whatever dried fruit and dried berries you can find. It is better to chop large nuts a little.
  8. Cover the table with parchment. Put the dough on it and smooth it out with your hands, turning it into a round cake about 1-1.5 centimeters thick.
  9. Using a knife or silicone dough spatula, cut the dough into triangles.
  10. Transfer the scones to a parchment-lined baking sheet.
  11. Send the baking sheet to an oven well preheated to 180 degrees. Bake the cookies for about 15-20 minutes until golden brown (cooking time depends on your oven).
  12. Wait for the cookies to cool and garnish with melted chocolate. You can also sprinkle the cookies with chopped nuts or coconut on top of the chocolate that has not yet set. The dish is ready. Bon Appetit!
