  1. In a bowl, combine sugar, vanilla sugar and eggs. Beat until mousse. Add melted butter, zest and stir gently. Pour flour in portions and stir the dough until it becomes smooth.
  2. Fill the Madeleine tins after greasing them with oil. Bake in an oven preheated to 180 degrees for ~ 20 minutes. Remove from the oven, immediately remove the cookies from the molds. Sprinkle the cooled madelena with icing sugar.
