  1. Let's start. The recipe indicates a mixture of spices, this mixture may include various components, depending on your preferences, usually ground ginger, cinnamon, cardamom, cloves, star anise. Choose the proportions yourself. I usually put in a little bit of everything, but more ginger.
  2. To prepare the dough, pour half of the sugar norm (125 g) into a saucepan with a thick bottom, melt it over moderate heat, only do not burn it! At the same time, put the water to heat, as the sugar melts, by this time it should boil.
  3. Already sugar is approaching its final stage and you see such a small gray smoke, at this moment pour in boiling water very carefully.
  4. Then add the remaining 125 g of sugar. Stir until dissolved and remove from heat.
  5. Add butter and spices. Stir.
  6. From the total amount of flour (500 g), take 130 g and add to the hot melted sugar and mix well.
  7. And add salt and soda to the remaining flour.
  8. As a mixture of sugar and flour becomes a little warm, add 2 yolks and 1 egg mixed in a bowl.
  9. Then add the remaining 370 g flour and knead the dough. Put it in the refrigerator overnight, or better for a day.
  10. The next day, take out the dough, roll it into a layer 0.5 mm thick, cut out the figures, in our case. hearts and bake in the oven at 180 C, about 8 minutes.
  11. Refrigerate on a wire rack. In the meantime, prepare icing to decorate.
  12. To do this, beat the protein in a bowl until the first bubbles. Continuing to beat, add the powdered sugar and starch in portions. You can also paint icing in different colors using a dye.
  13. The mass should be plastic, homogeneous, add a couple of drops of lemon juice.
  14. Put the icing in a pastry bag with a fine nozzle and decorate your gingerbread cookies to your liking. Wait for the icing to cool down and treat your family and friends. Bon Appetit!
