Mannik is a very tender and fluffy pastry that can be prepared according to different recipes. I would call the manna on kefir the most popular among hostesses, because the products you need are simple and affordable, and the result is always pleasing. Today we will diversify the collection of manniks and prepare this delicious pie with berries.

In fact, all the necessary ingredients and their quantity are very easy and simple to remember - the main ones need one faceted glass each. However, for accuracy, I measured everything using a kitchen scale. So, kefir of any fat content (I took 3.2%) - 250 milliliters, premium wheat flour - 130 grams, semolina - 170 grams, granulated sugar - 200 grams.

  1. The recipe for air manna with berries includes the following ingredients: black currant, semolina, wheat flour (I use the highest grade Lida), kefir (any fat content), chicken eggs, sugar, baking powder, salt, as well as a little refined vegetable (in my case sunflower) oil for lubricating the mold.
  2. First, we combine a glass of kefir and semolina, mixing everything until smooth. Since the semolina needs to be allowed to swell, leave the bowl at room temperature for at least an hour. True, I highly recommend doing this in advance - for example, in the evening and leaving everything in the refrigerator until morning.
  3. When the semolina swells in kefir, combine a couple of chicken eggs and a glass of granulated sugar in a beating bowl.
  4. Beat everything with a mixer at high speed until splendor and increase in volume - 5-6 minutes, so that the sugar is partially dissolved.
  5. After that, we shift the mixture of semolina and kefir to the egg mass. We mix everything.
  6. Mix a glass of wheat flour with a baking powder (10 grams) and a pinch of salt in advance. We sift everything to the rest of the ingredients.
  7. Mix everything quickly so that there are no lumps left. The manna dough is ready to bake.
  8. We take a baking dish (you can not only round - I have a diameter of 24 centimeters, but also square or rectangular). To prevent the baked goods from sticking, you can cover the form with parchment paper or make a so-called "French shirt". Grease the mold with a thin layer of butter, then sprinkle with flour, shaking off the excess. Alternatively (my case), you can simply grease it with vegetable oil - then you don't need flour. We shift the dough into the mold.
  9. Spread the berries on top evenly (150 grams) - they must be washed and dried in advance. Instead of black currant, you can use other berries of your choice.
  10. We bake air manna on kefir in the oven, which we preheat to 180 degrees, for 40 minutes. I have bottom heating, no convection.
  11. It turns out really airy and fluffy manna, very delicate and fragrant!
