This quick-to-prepare pizza base has a pita-like texture. The base is firm and slightly crispy. The dough is made from coconut and almond flour, and xanthan gum is used to give the desired texture. Thanks to this component, you can get a thin dough that will not fall apart. From the specified number of ingredients, one pizza with a thickness of about 30 cm is obtained. You can form a base with a smaller diameter, then the dough will be thicker. The prepared base can be stored in the refrigerator for about 5 days.

  1. Combine almond flour, coconut flour, xanthan gum, baking powder, and salt in a blender. Add apple cider vinegar while mixing. After the vinegar has spread, add the chicken egg. Stir until the dough is sticky and firm.
  2. Preheat the oven to 180 C, if cooking on the stove, preheat the pan.
  3. Use a rolling pin to roll the dough between two sheets of parchment paper.
  4. Place the oiled parchment paper on a baking sheet or pizza pan.
  5. Transfer the pizza to the parchment and bake for about 10 minutes, until the dough is completely cooked. When the pizza is ready, you can add the filling and heat it in the oven for another 5 minutes.
  6. If using a skillet: Transfer the pizza to a greased skillet, fry for about 2 minutes, until bubbles form on the surface. Turn the base over, reduce heat. You can add the topping immediately and cook the pizza, covered with a lid.
