The main ingredients for making cookies are sugar and flour, so to make keto cookies you just need to change the ingredients. In this version, instead of wheat flour, almond is used, and instead of sugar, erythritol or monk fruit. Because chocolate biscuits, sugar-free chocolate chips / chips will also be needed.   1. Preheat oven to 180C and line a baking sheet with parchment (you may need 2 baking sheets).
  2. Combine almond flour, cocoa powder, salt, and baking soda.
  3. In a separate bowl, beat the unsalted butter and sweetener with an electric mixer until they are a single mass of air.
  4. Add eggs and vanilla extract to the butter, beat with a mixer.
  5. Use a spatula to combine wet dough and dry ingredients until smooth, then add chocolate chips / shavings.
  6. Form 40-50 grams of dough into balls and place on a baking sheet. Note that the cookies will run slightly, so spread them a few inches apart.
  7. Flatten each dough ball to form a cookie. Sprinkle lightly with sea salt on top.
  8. Bake the cookies for 8-10 minutes, until the dough is completely set. The cookie will be very soft, but will harden slightly as it cools.
