Light and fluffy almond flour pancakes can be prepared in two ways: in the microwave and in a pan. Microwaving is the fastest way to make a low-carb breakfast. But, if you have time, it is preferable to cook the pancakes in a pan. This will make two medium-sized pancakes, advising 1 serving.

Ingredients

Directions

  1. Add all of the liquid ingredients to the blender bowl and blend until smooth.
  2. Then add all dry ingredients to the same bowl and mix until combined with wet ingredients.
  3. Take a microwave-safe mug or medium bowl and lightly brush the surface with butter.
  4. Add all of the mixture to the mug / bowl for 2 servings. This makes 1 fluffy pancake that looks like a pie in a cup. 1 serving = ½ cup of cake.
  5. Microwave the mixture for 45 seconds at 1100 watts. The operating time of the microwave will vary depending on the power. At 800 W, 60 seconds is enough. The middle of the pancake should remain slightly damp. It is better to choose a shorter cooking time to avoid overdrying.
  6. Add butter and keto syrup before serving.
  7. Place a skillet over medium heat, brush with butter.
  8. Once the butter has melted, add 1/2-1 / 3 of the dough to the middle of the skillet.
  9. Cook until bubbles begin to form on the surface. It will take 2-3 minutes.
  10. Turn the pancake over and cook for another 2 minutes, until golden brown. The recipe is for 2 medium pancakes. 1 serving = 1 pancake.
  11. Brush the pancakes with butter, keto syrup, or another sauce before serving.
