Unlike béchamel flour sauce, béchamel keto consists of egg yolks, chicken broth, and heavy cream. These components give the sauce the desired consistency and a pleasant creamy and salty taste.

  1. In a small bowl, whisk the yolks with a hand whisk.
  2. In a nonstick skillet, melt the butter over medium heat, add the chicken stock, cream cheese and cream. Simmer over medium heat until food is combined until smooth. Then reduce heat and bring to a boil.
  3. Add 2-3 tablespoons of the mixture from the pan to the egg yolks, stir. This is necessary so that the yolks are not boiled in the future from the temperature of the hot liquid.
  4. Add the egg mixture to the skillet with the remaining boiling cream. At this step, the yolks need to be added gradually, constantly whisking the mass with a whisk.
  5. Simmer the mixture over low heat until desolate, 1-2 minutes. Season with salt and pepper to taste, stir, remove the sauce from heat.
