Berry rolls made from low-carb fruits (raspberries, blueberries or strawberries) are a delicious sugar-free treat with a pronounced berry flavor. For cooking, you need only two ingredients: puree from berries and a sweetener that dissolves well. Erythritol powder, liquid stevia, or other low-carb sweetener is suitable. Erythritol was used in this recipe. If you are adding another sweetener, adjust the amount to your liking.

  1. Add berries and sweetener to a blender bowl. Whisk until puree.
  2. Pass the mixture through a sieve to remove pieces of rind and seeds.
  3. Place parchment paper or a baking mat on the baking sheet. Smooth out the puree on a baking sheet in a thin layer.
  4. Preheat oven to 140 degrees or coldest temperature. Bake the fruit dough for 2 to 4 hours, until the center is no longer sticking to the touch. If possible, leave the oven door slightly ajar. Check the fruit every 30 minutes while baking.
  5. Peel off the finished fruit dough, remove the parchment and then cut into 8 thin strips. Roll the strips into rolls.
  6. Note: You can use a piece of parchment or waxed paper to roll up to prevent the layers from sticking. When the tape is cool, unfold the rolls, remove the parchment and wrap them back. As it cools, the dough will become more moist and pliable.
