These dense, buttery almond flour buns are low-carb and sugar-free. Almond buns are best served with butter and jam for dessert.

  1. Preheat oven to 180 Celsius. Prepare the ingredients for baking: food and a 6-7 cm round cookie cutter (to shape the buns). If you don't have a mold, use a glass or mug.
  2. Combine dry ingredients (almond flour, sweetener, baking powder) in a bowl.
  3. In a separate bowl, combine the ghee, lemon zest, vanilla, and egg. Add dry ingredients and stir until smooth. You can use a plug or an electric mixer to do this.
  4. When the mixture becomes very dense, knead the dough with your hands to form a ball.
  5. Place the ball on a parchment-lined surface. Roll out the dough to a thickness of 2.5-3 cm and then cut 5 buns with a cookie cutter.
  6. Transfer the buns to a parchment-lined baking sheet. Leave a few cm between adjacent buns. Brush the surface of each bun with an egg and bake in the oven for 18-22 minutes until golden brown.
  7. Serve the keto almond buns warm or chilled to room temperature.
