Cauliflower puree is an easy way to replace mashed potatoes on the keto diet. The recipe is designed for 2 servings of cabbage weighing 500 grams. If you need more servings, double or triple the amount of ingredients.

  1. Boil cauliflower inflorescences in boiling salted water, or in a steamer bowl. Boil time 10 minutes, or until fork easily pierces the cabbage. Remove excess water, set the cabbage aside.
  2. Put a deep skillet on fire, add olive oil and garlic. Saute a little until the garlic is tender, about 2 minutes.
  3. Transfer the cauliflower and garlic to the bowl of an S-blade blender. Season with salt, pepper and fresh thyme. Stir until the mixture is smooth and puree-like. A little water can be added if necessary. Taste and adjust the seasoning to taste.
  4. Serve warm kale puree.
