This Rafaello dessert for the keto menu is prepared without baking. The recipe is based on coconut, coconut oil and almonds, but some of the ingredients can be replaced.

  1. Prepare butter and coconut oil at room temperature, do not melt the butter.
  2. Add butter, coconut oil, cream, and sweetener to a mixing bowl. Blend together until smooth with a blender.
  3. Mix the rest of the ingredients (100 g of coconut, all the flour and flavors) with a spoon.
  4. Combine butter cream and dry ingredients.
  5. Then form into balls of rafaello from the buttercream. Place the almonds in the center of the ball, cover the ball with coconut (remaining 50 g of coconut).
  6. Put the balls in the freezer for an hour, store in the refrigerator.
