Lemon keto cheesecake

  1. Soak gelatin in lemon juice. When it swells, dissolve, preferably in a water bath, so as not to overheat.
  2. Mix the softened butter with almond flour, add 1 tsp. sweetener and some vanilla extract. Mix very well.
  3. Spread the mixture over the bottom of the springform pan and tamp lightly. Put in the refrigerator.
  4. Beat the cheese with sour cream, while whipping, pour in the lemon juice with gelatin, add the zest, sweetener and vanilla extract.
  5. While whisking, pour in the chilled cream.
  6. Remove the nut-base form from the refrigerator, pour the filling over and flatten. Chill the dessert in the refrigerator, covering with cling film, for 8-10 hours.
