Summer omelet with sorrel and two types of cheese - curd and hard.

Ingredients

  1. Wash sorrel leaves well, dry and chop.
  2. Beat the eggs until smooth, so that they slightly increase in volume. Season with salt and pepper.
  3. Add half the sorrel to the beaten eggs.
  4. Grate hard cheese.
  5. Turn on the oven and heat to the maximum temperature (mine is 250 ° C).
  6. In a pan suitable for the oven, heat the olive oil (1.5-2 tablespoons) and butter.
  7. Pour the mixture of eggs and sorrel into the pan.
  8. Add half of the curd cheese almost immediately. Mix everything vigorously.
  9. As soon as the mixture begins to thicken, add the remaining sorrel.
  10. Spread the remaining half of the curd cheese on top.
  11. Sprinkle with grated hard cheese on top and drizzle with olive oil. Add salt and pepper to taste.
  12. Put the omelet with cheese and sorrel in the oven preheated to 250 degrees. Bake the omelet in the oven for 2-3 minutes.
  13. Remove the cheese and sorrel omelet from the oven. The omelet should be crispy around the edges and soft in the middle. Serve the omelette immediately.
  14. You can serve the omelet in a skillet, or divide it into portions with a wooden spatula and place it on a large warmed-up plate.
