And again I, and again with a recipe for homemade baked goods. This time I propose to try one of my favorite types of bread - with the addition of walnuts and buckwheat flour. The ready-made bread, the recipe for which I propose for the bread machine, turns out to be incredibly fragrant, with a rich taste, a crispy crust and a medium-mesh crumb that does not crumble at all.

This recipe for homemade bread is suitable not only for a bread machine - it can be easily cooked in the oven (at 180 degrees for about 35-45 minutes, depending on the characteristics of the oven). If you do not have ready-made buckwheat flour, you can make it yourself using a coffee grinder, only the grinding should be very, very fine. I do not advise replacing the walnut with others, since it is he who is best combined with the taste of buckwheat.

  1. The recipe for this simple, but very tasty bread in a bread maker includes the following ingredients: wheat flour (I used the first grade, but the highest grade is possible), buckwheat flour, peeled walnuts, refined vegetable (in my case, sunflower) oil, salt, granulated sugar and fast acting yeast. Regarding fresh or dry yeast, I will not tell you anything (I’m about the result), since I only use fast-acting yeast for the bread machine (those that are mixed directly with flour).
  2. The first step is not only to weigh all the products, but also chop the walnuts. Just do not forget to carefully examine each piece for the presence of partitions (even a small fragment can severely damage the teeth). Nuts can not only be chopped in a blender, but finely chopped with a knife. We need a fairly large nut crumb so that the small pieces are still there.
  3. We lay down the ingredients according to the instructions for the bread maker. At first I have liquid, then dry products. Pour boiled water at room temperature into the container of the bread machine, pour vegetable oil there.
  4. Sift wheat and buckwheat flour, pour into a container. The flour is sieved in order to get rid of lumps and possible debris.
  5. Now add chopped walnuts right away.
  6. Pour salt, sugar and fast-acting yeast into different ends of the container.
  7. We place the bowl in the bread maker, turn on the Basic mode, the time is exactly 3 hours. By default (I mean, I put it this way myself) I have a loaf of 900 grams, the crust is medium. The first batch of dough begins and lasts exactly 10 minutes. After about five minutes, a bun should form. Here you have to help the bread maker a little - depending on the moisture content of the wheat flour, you may need more or less. If there is not enough flour, the bun will creep and not keep its shape - just add a couple of tablespoons. And if you see in the first minutes that the dough does not collect in a ball, but is distributed along the walls in the form of pellets, add a little water. In general, the bun should be soft, but at the same time keep its shape and not blur. Now we no longer open the lid of the bread machine until the end of the preparation of the bread.
  8. After 3 hours, the buckwheat bread with nuts will be ready. My roof is slightly deformed - this is due to excess moisture in the dough. This time the flour got wet, so the crust sagged slightly. But this does not affect the taste of the finished baked goods - it will bring only minutes of discomfort to aesthetes.
  9. We take out the finished bread from the container, remove the paddle and completely cool the baked goods on the wire rack, preferably on the side.
  10. Buckwheat bread with walnuts turns out to be very aromatic, with a rich taste. Outwardly, it resembles bread with rye flour - this is thanks to buckwheat flour and nut crumbs. It slices perfectly and does not crumble even when warm. A great addition to first courses or a perfect base for making homemade sandwiches. Try it yourself!
