California keto rolls with salmon

Easy to prepare salmon keto rolls with cauliflower rice. The rolls are rich in cream cheese and avocado fat, are low-carb and contain about 3 grams of net carbs per serving.

  1. Prepare cauliflower rice any way you want. Microwave the cream cheese on high power for 15 seconds until very soft. Combine rice with cauliflower. Add apple cider vinegar and half a tablespoon of salt. Stir.
  2. Cook the salmon any way you like (microwave, skillet, or oven). Season with salt to taste.
  3. Prepare a bamboo sushi mat and cover it with cling film. Place the nori leaf on top, spread the cauliflower rice.
  4. Top with a quarter of crumbled cooked salmon, a couple of bell pepper slices, cucumber and avocado.
  5. Start rolling up the bamboo mat to tighten the filling. Press down firmly on the filling before turning the roll to the end.
  6. Wrap the roll with a rug.
  7. Cut the roll into 6 equal pieces using a sharp knife.
