Cheese keto buns are low-carb dough products that rise easily. These buns are low in calories due to the lack of almond or coconut flour. The dough balls keep their shape well, bake evenly and cover with a crispy crust. For cooking, wheat gluten is used (it is indispensable in this recipe), oat fiber and flaxseed flour.

  1. Preheat the oven to its lowest temperature, then turn it off as soon as it warms up. The oven will be needed to cure the dough.
  2. In a large bowl, combine all dry ingredients, including yeast.
  3. In a separate bowl, beat the eggs with a mixer, then add them along with shredded cheese, butter and water to the dry ingredients.
  4. Stir well until the dough starts to stick together.
  5. Mix the dough with a mixer with a hook attachment at medium speed for 5-8 minutes. If it is not possible to use this method, you need to knead the dough by hand for about 10 minutes.
  6. Form a ball of dough, transfer to a greased bowl and cover with baking film on top. Place the dough in a preheated oven with the door ajar (or somewhere warm) to rise (1 hour).
  7. After an hour, the dough will double. The buns can now be shaped.
  8. Cut the dough into 6 even pieces, roll each ball with your hands to make it smoother. If cracks appear on the dough, "fold" them together and wrap in the center. Repeat this step until cracks are minimized.
  9. Place the rolled balls of dough on a greased baking sheet, 3-5 cm apart. Cover them with plastic wrap and let them rise for another 15-20 minutes.
  10. While the buns are coming up, preheat the oven to 190 C.
  11. After 15-20 minutes, brush the top of the buns with lightly beaten egg yolk and sprinkle with grated cheese.
  12. Bake the buns in the preheated oven for 45-50 minutes (if you are making 12 buns, the baking time will be 25-30 minutes). The buns are ready if they feel empty on the inside when pressed on the crust.
  13. Serve the buns warm or cold. If you want to add flavor to your buns, coat them with an Italian herb butter / garlic butter mixture while still warm.
  14. The buns can be stored in the freezer in a zip bag for future meals.
