Low-carb chicken taco soup is definitely one of the tastiest and easiest soups to make. This soup can be seasoned with your favorite additions: sour cream, grated cheese or hot pepper.

  1. Cut the tomatoes into cubes, peel the seeds and finely chop the pepper, cut the onion into cubes.
  2. Add broth, Taco seasoning, tomatoes, chicken to a saucepan or deep skillet. Bring the soup to a boil and simmer over low heat for 15 minutes.
  3. Add onion, pepper and simmer for another 5-10 minutes, until chicken is cooked.
  4. If the soup is not spicy enough, you can adjust the flavor by adding hot jalapeno peppers.
  5. Conversely, if the soup is spicy, you can use sour cream to smooth out the spiciness.
