Chocolate keto muffins with almond flour

Chocolate keto muffins can be made without adding cocoa powder to the dough, and the dessert can be stuffed with pieces of real dark chocolate without sugar. These muffins can also be called “chocolate chip muffins”. You will need a piece of a chocolate bar for the filling. The chocolate should be crumbled or cut into 1 cm pieces and then placed several of these pieces in each cake before baking in the oven. The chocolate will melt and you will have vanilla muffins with a soft chocolate filling.

  1. Preheat oven to 180C.
  2. Combine almond flour and baking powder in a bowl. Add 2 eggs to the mixture and stir until combined.
  3. Melt the butter and stir in the egg-flour mixture.
  4. Add the remaining ingredients (excluding chocolate) to the dough and pour into the muffin tins lined with a parchment holder.
  5. Cut the chocolate into 1cm thin slices and sprinkle them on top of the muffins. For each cake, 2-3 pieces of chocolate.
  6. Bake in the oven for 20-15 minutes. Remove and cool muffins before serving.
