In the season of berries and fruits, it is a sin not to please your home with delicious pastries with a sweet juicy filling. Let's bake a pie with cherries and almonds. Loose dough, moist center and crusty crust due to almonds.

  1. Prepare all ingredients.
  2. Keep butter in the refrigerator.
  3. If fresh cherries are not available, frozen ones will do.
  4. You can take lemon, orange or lime zest.
  5. Send water to the freezer - it will be needed in 15-20 minutes. Peel and leave in a colander for a while to remove excess moisture.
  6. There should be somewhere 350 grams of pitted cherries.
  7. Sift flour into a deep bowl. Add baking powder. Stir.
  8. Add salt and sugar. Stir.
  9. Dip the cold butter into the flour mass, and then remove the layer breaded in flour with a coarse grater. Dip periodically in flour, rub all the oil.
  10. Use your fingers to rub the flour and butter until finely crumbled.
  11. Add almond extract and ice water.
  12. Stir with your hands until large lumps are formed. You don't need to collect all the dough in one big lump.
  13. Cut the almonds into small pieces.
  14. Divide the flour mass in half. Add chopped almonds to one.
  15. Stir with a spoon.
  16. Prepare a baking dish - grease it with butter or cover it with parchment (I have a detachable baking dish with a diameter of 23 cm).
  17. Put the dough without almonds in a mold and distribute with your hands along the bottom and bottom of the walls - make a side 1-1.5 cm high.
  18. Add flour, cornstarch, lemon zest and thyme leaves to the cherries.
  19. Stir until all the cherries are in flour.

  21. Place the cherries on top of the dough base.
  22. Spread the crumbs with almond slices on top. Press where needed.
  23. Bake the cake at 180 degrees for 50-60 minutes (time depends on the power of the technique - focus on your oven). The cake should be browned and the wooden skewer should remain dry after piercing the dough.
  24. Chopped dough pie with cherries and almonds, remove from the oven and cool slightly in a mold.
  25. Then transfer it from the mold to a wire rack and cool completely.
