Coconut oil and coconut sweets are a sweet refreshing snack and or dessert for tea. Candy can be made in different flavors by adding natural flavor and food coloring. For example, strawberry, like in this recipe.

  1. In a bowl, combine chopped coconut, erythritol, stevia, and vanilla with a low speed blender.
  2. Melt the coconut oil in a small saucepan over low heat.
  3. Add the melted coconut oil to the coconut mixture and stir with a spatula.
  4. Add egg white and mix well.
  5. Spread half of the mixture in a square shape (size 20 cm).
  6. Add food coloring and strawberry flavor to the remaining mixture and mix well.
  7. Spread the remaining half of the mixture over the first layer, refrigerate for 1 hour.
  8. After 1 hour, cut the coconut candies into 16 pieces. Let the candies sit for a few minutes before serving to soften them.
  9. The sweets must be stored in the refrigerator as coconut oil melts at room temperature above 20 C.
